Ingredients

  • 1 cup bulgur wheat
  • 1 cup hot water
  • 1 cup diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped parsley
  • 2 tbsp chopped mint
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Pour hot water over bulgur wheat and let it soak until soft.
  • Dice cucumbers, tomatoes, bell peppers, parsley, and mint.
  • Mix soaked bulgur with vegetables, herbs, lemon juice, and olive oil.
  • Season with salt and pepper to taste.
  • Serve chilled and enjoy!

Notes

For an extra flavor boost, try adding a pinch of cumin or a dash of balsamic vinegar.
